I will be going to Oahu and the big island of Hawaii for two weeks in May with a model. It will be both of our first time there.
Plan to see as much as possible of Pearl Harbor, USS Arizona, USS Missouri, and etc. Any recommendations of other places to see and shoot at?

Any suggestions would be appreciated.

Diamond Head is a great place. It's beautiful, has great views, and it's not a tough hike to reach the summit.

I just got back from there.

It depends on the type of shoot you want to do.
Beach shoots....everywhere. Just pick the right time.
Nudes....Plenty of private beaches and nude beaches near Hilo on the Big Island.
Waterfalls, Nature, even snow if you want to climb Kilowea volcano.

Out doors Hawaii offers infinite opportunities.

That's "Kilauea", and it is not the place to find snow - too low an elevation. Instead, you have to DRIVE up to the top of Mauna Kea (13,000' tall) to sometimes find it. If the weather is clear enough to see it from sea-level first, you can avoid a lot of wasted time.

I've just returned from the Big Island. We hired one local model who drove us around the island to many different locations. Paid for a model, and we got a tour guide and driver as well.
